Beef Enchiladas

The base of this recipe came from Our Best Bites, but of course I have made my own modifications. I usually don't have Enchilada Sauce on hand so I've made my own that my family really enjoys. That recipe is in Scratch That. Even my 3 year old asks for seconds of this dinner.
Beef Enchiladas

Meat
Ingredients
1 pound
Ground beef
1 tablespoon
Onion powder
1 tablespoon
Garlic
1
Green pepper
1 tablespoon
Chili powder
1/2 teaspoon
Cumin
1/2 teaspoon
Oregano
1/2 teaspoon
Pepper
1 teaspoon
Salt
Instructions
Dice green pepper. Brown ground beef with spices and green pepper. Remove from heat.

Filling
Ingredients
1 cup
Sour cream
2 teaspoons
Lime juice
1 cup
Cheddar cheese, grated
8 ounces
Tomato sauce
Instructions
Mix with ground beef mixture

Enchilada Style
Ingredients

Flour tortillas
1 can (19 oz)
Enchilada sauce
2 cups
cheddar cheese, shredded
Instructions
Fill each tortilla with about 1/2 c mixture. Fold ends over and roll. Place in a 9x13 pan. Top with enchilada sauce and cheese. Bake at 350* for 20-25 minutes, or until cheese is melted and bubbly.
